The year of the rat started last week and I celebrated with some homemade fortune cookies. You really do need to move fast when they come out of the oven to get the four on the cookie pan shaped properly. I had just watched the The Great British Baking Show (S05:E02) where the technical was fortune cookies. I don’t remember which contestant put the still warm shaped cookies inside a muffin tin, but this is definitely the best way for them to retain their shape while they cool.

They were easy to make, and it was fun to have for this years Lunar New Year. Next time I may attempt the orange flavored ones from the Great British Baking Show.
Fortune Cookies
Ingredients
- 5 egg whites
- 4 tbsp water
- 1 tsp vanilla
- 1 cup sugar
- 1 cup sweet rice flour
Instructions
- Preheat oven to 375 degrees
- Cut small slips of paper that are about 3.5 inches long and write fortunes on slips of paper.
- Mix all ingredients together in a bowl using a spoon or spatula.
- Line a cookies sheet with a silicon liner.
- Using a tablespoon, pour the batter onto the liner and swirl into an approximately 4 inch circle. Only put four circles per batch.
- Bake for 9 minutes. The edges should be browned.
- Using an offset spatula flip the cookies over and add fortune to middle. Fold the cookies in half (looks like a half circle).
- Place the folded edge of the cookie on the rim of a glass and gently fold over the rim to create the signature fortune cookie shape.
- Place shaped cookie inside a muffin tin to cool and harden.
